Q: I know oak is seasoned outside in the elements, ideally for 4 years or more. How is sugar maple seasoned?
A: Sugar maple isn't really seasoned because you are going for a different goal. In the case of oak, outdoor seasoning is to rinse out (with rain) the tannins in the wood and reduce them. In the case of maple, we are trying to keep the most maple sap in the wood possible so that the maple flavor is strongest.
