William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat (never exceeding 180 degrees F.) under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 5 gallons of full-bodied varietal wine.
The 116 ounces of concentrate included in each pack is enough to make 3 gallons of wine with an alcohol content of 12 to 14%. Contains sulfiltes, so you do not need to add them before fermentation. Sulphites are around 20 to 25 ppm before dilution, and after dilution, the juice right before fermentation has about 10 ppm sulfites. You may also have to add acid to balance this with your personal preferences as far as overall acidity goes.
Petite Sirah produces a wine that is full-bodied, dark and inky. Something like Cabernet, except with a bit less tannin.
REFRIGERATION REQUIRED: Refrigerate this product upon receipt. Shelf life is 4 weeks after receipt if refrigerated.

Q: The product description says "Concentrate for 3 Gallons." What is the volume of the product as shipped? It lists 68 brix, so when I add water to get to about 24 brix, what will the final volume be? I'm just trying to find out the size volume of concentrate that's in the package.
A: 116 fluid ounces of 68 brix concentrate is in the package. We recommend you add enough water to get 3 gallons total, for a starting gravity of around 1.110



Nice Varietal Profile
This is a very nice product that adds a nice component to the wine you've made. The only problem was that there was quite a bit of sediment near the end of pouring out the liquid. I'll now have to filter my wine when I had originally thought that I wouldn't have to.
