William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat (never exceeding 180 degrees F.) under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 3 gallons of full-bodied varietal wine.
The 116 ounces of concentrate included in each pack is enough to make 3 gallons of wine with an alcohol content of 12 to 13%. Contains sulfiltes, so you do not need to add them before fermentation. Sulphites are around 20 to 25 ppm before dilution, and after dilution, the juice right before fermentation has about 10 ppm sulfites. You may also have to add acid to balance this with your personal preferences as far as overall acidity goes.
REFRIGERATION REQUIRED: Refrigerate this product upon receipt. Shelf life is 4 weeks after receipt if refrigerated.
Cabernet Sauvignon is one of the most popular California varieties, and is ideal for the true red wine lover than can age their wine for 3 years or more. This grape produces a full and rich red wine, with more boldness and dry tannin flavors than Merlot. The grapes for this concentrate come from Woodbridge, California. You can easily age this one for 5 years and have it continually improve.

Q: How is this shipped? Is it temperature controlled? I had difficulty with a previous shipment on a hot truck
A: It is shipped two day air, or local service if you are close to us. It does not go via refrigerated carrier, and you must refrigerate it immedately upon receiving. It can get hot for a little bit, as long as you refrigerate it immediately on arrival.



Faux Bordeaux
I recently combined equal parts Cabernet Sauvignon and Merlot, total 6 gallon batch, with the intention of making a "faux" Bordeaux. This, after reading the back label in liquor store of a Bordeaux I couldn't afford ($20). Was made with cab and merlot, no percentages given. Anyway, I've been marinating some toasted mulberry shards, taken from a log in my woodpile, in the blend, and it promises to be another highly sippable wine made from William's Concentrates. And this, for about $3/bottle! And this, for a financially strapped retiree. I haven't been to a liquor store in several months, because I'm thoroughly satisfied with the wine I've been making with William's. Even with the recent price increases, still a great deal!
Cab concentrate
The Cab Concentrate is a reasonably priced concentrate which makes a decent wine which I use to add to my own grapes wine to supplement the volume I need to fill my barrels. It has good stability and balance and does a great job for what I need.
Great juice for the money
I purchased two 2.5 gallon containers of the Cabernet. Aged it for 6 weeks in French oak. Taste great even after only aging 3 months. Looking forward to tasting it after a year or two. I would suggest this juice for any winemaker.
