William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat (never exceeding 180 degrees F.) under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 3 gallons of full-bodied varietal wine.

The 116 ounces of concentrate included in each pack is enough to make 5 gallons of wine with an alcohol content of 12 to 13%. Contains sulfiltes, so you do not need to add them before fermentation. Sulphites are around 20 to 25 ppm before dilution, and after dilution, the juice right before fermentation has about 10 ppm sulfites.  You may also have to add acid to balance this with your personal preferences as far as overall acidity goes.

Merlot is a full-flavored red grape, perhaps the most popular of red wine grapes. A bit less tannin and boldness than Cabernet.

I previously made wine from this concentrate. Now I mainly use it to increase the brix on fruit from my backyard vineyard, in which I occasionally have trouble getting the fruit ripe. Good stuff.

Q: Why does it need to be refrigerated when i received the 3 gallon merlot

A: The concentrate is unpasteurized and must be refrigerated upon arrival or it will start fermenting.

Q: How does this create alcohol if you don't add sugar before fermentation? Do you have instructions how to make wine from your # G90 product?

A: There is plenty of fermentable sugar in the grape juice, so there is no need to add any additional sugar to the hydrated grape juice concentrate.
