A Belgian origin yeast which produces a spicy flavor profile with low esther production. Great in Belgian Wit styles. Low flocculation, attenuation: 72-76%. Ideal temperature: 62°-75° F.

Higher esthers
Brewed honey wheat with this. Had higher Esthers than would have liked. But they blew off fairly easily with a cold filter of around 24 hours. Finished with a nicely balanced honey wheat.
Witbier yeast
Excellent fast yeast. Gives great flavor to the beer. You must have plenty of headspace, and be careful if you're doing a starter - when they say this is an explosive fermenter, they aren't kidding.
