Kölsch is a pale, mildly hopped ale, with a unique soft fruitiness in the finish. Developed in the German city of Cologne, Kölsch has become increasingly popular in Germany in recent years, perhaps due to its unique quality of being an ale with the refreshing lightness of a lager, yet with the more complex, fruity finish of an ale. True German Kölsch is rarely seen bottled in the United States, probably due to German law which states Kólsch can only be brewed in Cologne, and only by one of the 22 licensed Kölsch breweries. Alcohol: 3.8%, IBU's 27.
William's Kölsch is an authentic rendering of this famous Cologne beer style, and can be either consumed quickly like an ale, or lagered (stored cold) after bottling for 8 weeks to develop the milder traditional flavor. Includes 6 pounds of blended malt extract, flavoring and aromatic hops, and corn sugar for carbonation. Yeast is not included, order separately above.
Makes 5 gallons with a starting gravity of at least 1.039. Ease of Brewing: Beginner.
Yeast recommendations:
1. LalBrew Novalager Dry Yeast is easier to use, and makes a beer with a smooth lager type flavor and is temperature tolerant.
2. 2565 Wyeast Kölsch Liquid Yeast if you can brew at a temperature of 65 to 72 degrees F.

Q: I was gifted a williams kolsch style box, directions in the kit say to boil 3-4g of water....is this a smaller size bag of malt extract? The kits you have listed call for 5g...
A: I'm not sure why your instructions say 3-4 gallons of water. It could be a very old kit, as all the instructions in our system say to boil 5 gallons of water. Here's a link to the current instructions: http://www.williamsbrewing.com/pdfs/K57.pdf Check the date on the yeast. If it is over 6 months old it will need to be replaces.



Some Tweaks
I just kegged it so waiting for carbonation. Taste was good coming out of the fermenter. I would like a hair more hop, but then maybe not the style. Kit also used table sugar and i would have preferred corn sugar as it dissolves better. One final thought, when running the bottling sugar requirement through my calculator— should have been 4.8 ounces fir 2.5 volumes at final FG of 1.011 and 5gal. I added more sugar, and wondered about the instructions for a novice to add only 2/3rds of the amount provided?? why - it would be under carbonated!!

I tasted the wart before going into the keg for final carbonation. Everything seems fine, the yeast made the right amount of alcohol. Soon I will be taking it along to a party of other brewers.

Delicious and easy to brew. Lovely color in the glass. Delicate but floral nose. If you like lighter bodied ales, this one is for you! Keep up the fantastic work Williams Brewing!
Kolsch
Very smooth and goes quickly. Simple to brew and love the authentic liquid yeast strain. Highly recommended and this is always a go to kit for me.
