William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 5 gallons of full-bodied varietal wine.
The 192 ounces of concentrate included in each pack is enough to make 5 gallons of wine with an alcohol content of 12 to 13%. Contains sulfiltes, so you do not need to add them before fermentation. Sulphites are around 20 to 25 ppm before dilution, and after dilution, the juice right before fermentation has about 10 ppm sulfites. You may also have to add acid to balance this with your personal preferences as far as overall acidity goes.
Riesling is a grape that has adapted well to California, and tends to produce a floral, fruity white wine. Like Chardonnay, adding a little oak to this one during the ferment can provide a welcome hint of oak.

Q: I just received my order of Riesling Concentrate, it is brownish in color. Is this normal or is it bad?
A: It is brown in concentrate form, dilute it to see its true color. Concentrates are always slightly darker than fresh grape juice, due to the heat of the concentrate process.

Q: I recently ordered a Riesling kit and made a wonderful wine. My question is what type of Riesling was it. is Grey Riesling, Johannesburg Riesling, or some other type?
A: Our Riesling is not grey or Johannesburg, it is just plain Riesling, from Woodbridge in California.

I do a co-pitch of yeasts with one meant for releasing aromatic compounds and the other intended for sur-lie aging. Left it on the lees for 1 year with battonage every three weeks and wow! It was supposed to be my table wine as I normally don’t use concentrates for whites but the quality is so high I changed my mind

The Riesling turned out tasty and cleared fast. I am looking forward to the flavors that are brought out in the coming months. It’s already quite smooth at only a month.
Produces wonderful pear/apple aromas with the right yeasts!
This is a really excellent product - at least for the year I purchased it (2021). With the right care (low temps; correct nutrient add'ns) and the right yeast (in my case I made two ~5.5 gal batches using D47 for one and 58W3 for the other) you can get some great flavors out of this concentrate. I did choose to increase the TA with the addition of some tartaric acid but I am sure you could skip that and still have a nice crisp white wine. This is high quality concentrate.

I agree with the previous reviews. although i just bottled at about 5 months old, this is a really nice wine. finished bone dry, not too much fruit - and agree on the earthy and spicy flavors. i'm thinking this will age out real nice.

We made this late in 2011. Absolutely beautiful Riesling. Tropical fruit nose and a apricot, mango, pineapple taste with a soft spicey overtone. This wine is still young but so far one of the best California Rieslings I have tasted. High quality juice.
