Great coffee, better service

Pros: You can see from my earlier post that I decided that I liked the Brazilian Estate beans enough to order them alone (although there are a few other beans that I may order again). When I was ready to order, and almost desperate for beans, I logged in and found that they WERE OUT OF STOCK! I shot off an email and very quickly got the response that the website had not been updated and they did have the Brazil Estate! Gotta love dealing with Williams.

Cons: You eventually run out. They do move from first crack to second crack quickly so be on your toes.

Pros: I've been ordering the multi-sampler packs and keeping good roasting notes, and I believe I've decided on this bean, along with the New Guinea Estate. I rarely blend beans, unless it's just to throw some in to make a full batch, so I mostly roast the single source bean. I agree with the other reviewer that this does tend to roast to second crack quickly (I almost had a fire), but with my Behmor I just changes to the P2 profile and it's great.

Cons: None, unless you burn up your roaster or worse. Just sit and tend to your raost and you'll be glad you did.

Brazil Estate

Pros: Great stuff. It holds a good roast from the mild to the dark.

Cons: Going to the Roast of an Espresso is a little too roasted. It begins to get a burned taste after Dark or French roast level.

Pros: ...pot after pot, this is a VERY smooth, rich bean. I find the sweetness is barely noticable on darker roasts, moreso on lighter. It's VERY sweet smelling during the roasting process which, fills the house with the most pleasing of aromas. It roasts a bit faster than other beans I've tried, so do keep a sharp eye on your roaster. This has become one of my favorite beans, along with Columbian Supremo.

Cons: Tends to be a bit of a smoke generator, so be aware that your home's smoke detectors might go off!
