Happy wedding guests!

I bought the double ipa kit a few weeks ago and made a five-gallon keg of it for my daughter’s wedding reception. I can’t tell you how many compliments I got last Saturday night. Interestingly, I had some compare it to Blue Moon. Anyway, I had seven varieties of bought beet, but this is what most wanted until it was gone. I will definitely be doing this one again. Mike

Excellent IPA

This is a very good DIPA. Follow the instructions and if you can, let it sit in the bottle or keg a month if you can as it will clear and smooth out. I love this double IPA-be careful, it sneaks up on you. Brew it, drink it, love it!

Dissapointment of an IPA

I have brewed many Williams kits. Most all very good. This one was a disappointment. Followed directions to a tee, yet results were poor. Either yeast was bad or ingredients expired. Everything I had was double sanitized and climate controlled. Probably won't try this one again.

Good Hoppy IPA

This is a good IPA. It is not as strong as most double IPAs, but still pleasantly hoppy. The instructions were thorough and easy to follow. Despite the warnings, I had no problem with the yeast. The package was not swollen when it arrived. Once activated, the package swelled quickly, and the yeast fermented vigorously once added to the wort. I had to wait longer than the recommended time after bottling. Bottles opened after 1-2 weeks were flat and sweet. After 4-5 weeks, they were great, with normal carbonation. William's instructions warn you to drink this quickly. My bottles were fine for a few months, but one bottle sat around for about 9 months and lost its flavor. Overall, a good kit, and a nice small step beyond a beginner recipe.

Good IPA

Thoroughly enjoyed brewing this beer. My family and friends who aren't huge on IPA's liked it. As one who fancies IPA's, this wasn't quite bitter enough for me, but it certainly can be tweaked for the future. The pilsner base was a good choice to bring out the flavors. I found it needed considerable time in the bottle to condition properly. After about 5 weeks it reached its peak; prior to that the hop character had not come through to its fullest. I will brew this one again, maybe throw in a few Columbus hops for my tastes =)
