Brewed on 11/24/23 - OG was 1.066; In Primary@ 69F over 7 days – until 12/11/23. FG was ~ 1.018 which made for a Alcohol By Volume: 6.30%; Into secondary @ 70-71F for close to an addl week until 12/17/23 just to see if gravity changed any and to settle/clear some. Cold Crashed for 24 - 48 hrs; Kegged on 12/19/23 & chilled to 37-38F and started to slow carbonate at ~12 psi over the course of 5-8 days. Was shooting for ~2.6 - 2.7 volumes of CO2. Couldn't really get the carb level right - beer was ok but seems a little off-- thinking some oxidation at transfer from prim to secondary but not sure. Hoping after a little time it will get better. I'm sure my mistake somewhere..

If you live down under, or are in Hawaii, this is the most wonderful Christmas beer ever!! I Brewed this kit starting Nov. 23 = to close to Christmas (should have started Nov.1) OG was 1.072+ Prim@ 68f for 7 days; Second was 1.035 @ 72f and today, Dec 22 it is still just over 1.025 so it will not be done by the 25th ugh! +/-. The smell and taste of the gravity checks so far have been the best summer beer I have ever had! It has a very refreshing grapefruit taste so it is an A+++ Beer. This great beer was a mess up on my part. I should have ordered the holiday beer kit which I normally brew for Christmas opps, must be getting old. In any case, this will turn out as a really great tasting beer in Jan - Feb. Williams; Please keep this one in stock until past Feb. (maybe call it christmas in July beer?)

I haven't brewed the wit beer yet, but the honey Brown is bubbling like a scuba diver. I plan putting a liter of Habanero vodka in each 5 gallon batch when I bottle, just to spice it up a bit.

This was my summer refresher after working in a hot kitchen. The slight wit tart with the spices was one of the most refreshing beers I have ever had on tap. I will be doing this again.

really like this style of beer very smooth and refreshing have no trouble sharing as everyone seems to really like it
