Outstanding IPA

Pros: William's kits just astound me with the quality of the finished product. My prior experiences with kits (other than Williams's) have been mediocre to bad. Out of habit, I dry hopped this IPA and kreusened. I needn't have bothered. The kit actually works as well or better without my tinkering. The result is a dry, aggressively hopped IPA with a creamy head. I'm trying the other kits, but I know I'll come back to this one.

Cons: This is hardly a con, but the yeast pack was so fresh it was ready to pitch in about four hours. So don't pop the nutrient bubble before you're ready to cook.

Pros: Easy drinking, good beer for summer. Has an aftertaste like a pilsner, very nice. Good head.

Cons: Not as hoppy as I thought.

1st Brew

Pros: I picked this for my first brew. My friends all thought I was a pro. Trust me, I am not, Williams made it easy. The beer was great and I am hooked. For you Southerners, it tastes like a Sweetwater 420 with more hops. Quite tasty on a hot Southern day. I am brewing my 4th batch from Williams and I love them all.

Crisp, light Summer IPA

Pros: Produced a medium bitterness, crisp, light colored Ale. Good head blended away in a few minutes. Hop aroma was pronounced and lingered in the nose for a while after the drink. If anyone was overwhelmed by the Williams Triple Hopped Ale, this is its lighter, more subtle cousin. A satisfying beer.

Cons: Nowhere near the 80 IBU listed. Maybe half that. The beer is a tad light and crisp for an IPA. I would add a couple pound of a light two row grain to this recipe and some more alphas to the bittering stage.
