Amazing!

I do a co-pitch of yeasts with one meant for releasing aromatic compounds and the other intended for sur-lie aging. Left it on the lees for 1 year with battonage every three weeks and wow! It was supposed to be my table wine as I normally don’t use concentrates for whites but the quality is so high I changed my mind

The Riesling turned out tasty and cleared fast. I am looking forward to the flavors that are brought out in the coming months. It’s already quite smooth at only a month.

Produces wonderful pear/apple aromas with the right yeasts!

This is a really excellent product - at least for the year I purchased it (2021). With the right care (low temps; correct nutrient add'ns) and the right yeast (in my case I made two ~5.5 gal batches using D47 for one and 58W3 for the other) you can get some great flavors out of this concentrate. I did choose to increase the TA with the addition of some tartaric acid but I am sure you could skip that and still have a nice crisp white wine. This is high quality concentrate.

I agree with the previous reviews. although i just bottled at about 5 months old, this is a really nice wine. finished bone dry, not too much fruit - and agree on the earthy and spicy flavors. i'm thinking this will age out real nice.

We made this late in 2011. Absolutely beautiful Riesling. Tropical fruit nose and a apricot, mango, pineapple taste with a soft spicey overtone. This wine is still young but so far one of the best California Rieslings I have tasted. High quality juice.
