Very Good Young Wine So Far.....

Giving 4 stars at this point because I just bottled in May, 2012 (after starting late Feb. 2012). It might even get better with age if it even lasts that long. Added Chopped Raisins to primary, used R212 yeast with yeast food and added 1/2 c french oak chips both at primary and again after adding fining agents. Let bulk age for approx 1 1/2 mos. then bottled. At June 2012, Better than Gnarly Head (their blend wine -- that's all I had during a taste comparison). It is a good wine, but for me I wish there was more peppery taste/note to it. But, again, I am thinking age will do this wine a lot of good.

Pros: Behaved exactly as I'd expected during fermentation. No sugar ever needed with this concentrate. I like that!
