Williams's Merlot

Excellent fermentation with typical sulfur odor for about a week. Light acidity that smoothes out with aging. Subtly bold. Very enjoyable.

Better for port style

Tried it twice. The Merlot style wine is relatively thin and not that appealing. It works better as a port style of wine, when made with lesser volume... 4 gallons instead of 5 gallons. Three to 4 rakings for spontaneous clearing.

I have made this wine many times and it comes our great every time. I prefere a sweeter wine myself, but the wife loves,it.
