Belgian Wit

Absolutely delicious beer. As my first brewed beer, it was an extremely easy process and did not require a significant amount of time. Was ready in 5-5.5 weeks!

First Batch for New Guy to Brewing Beer

Pros: The Belgian Wit may have been my first try at brewing, but I ended up with a great tasting beer the first go. All you have to do is follow the instructions. I was pleasantly surprised after that first sip with how good it tasted. I had imagined that making beer was one of those arts that takes years of practice to do right. I was wrong. It was easy to make and even easier to drink. With the success on the first batch, I'm hooked on William's Brewing kits. I have my second kit fermenting as I type (Raspberry Wheat).

Christmas Wit - Should have purchased more

Pros: A terrific beer. Delicately seasoned, nice dry finish. Easy to drink with just a little more kick and a little less sweet than a commercial Belgian wit. It was in the secondary fermenter for almost 3 weeks, worth the wait and ready to drink 8 days after bottling. Everyone loved it and it didn't last long. Will definitely buy multiple kits next year if it is available.

Cons: I'd buy this kit any time of the year.

WILLIAM'S CHRISTMAS WIT

Pros: This review is actually for the "Christmas Wit", which I don't see listed at the moment. Like others, I had a pretty aggressive fermentation, to the point that it actually lifted the top off my fermenter! OG 1090 (!), FG 1025. Flavor is very mild.

Cons: There was only one spice pouch included, although the recipe mentioned two. I personally find the beer way too sweet, although I haven't tried it again since leaving it to mature (in the keg) for an extra month.

Wow, you need to let this age

Pros: Yes, you do need to watch the fermentation. Need to let it age. The difference between just 2 wks, versus 3 wks was startling, supply may not make it to 5 or 6 wks. Used Lemon instead of Orange, it works. Everyone, I mean everyone, is sucking this down.

Cons: Highly advise to double the receipe if you can, it will go that fast.
